The Classic "No Frills" Chili Cheese Cheese Omelet....

There is a place in my town, probably not much different from a place just like it in yours. Call it a Diner, a Cafe', a Greasy Spoon, a Lunch Counter... It's been in business since the 50's, the menu and decor have changed little if any, in all those years. The service is always a little abrasive, but with a friendly and familiar edge. We're talking breakfast and lunch only, seat yourself, no parking, always a wait, lots of linoleum, real milk shakes and filled with a loyal local customers base. Sound like a place you know??

Well, this particular place may be a notch above some of the others. In fact, it is World Class. In the name of preserving the exclusive, tucked away nature of this little gem, I am going to refrain from mentioning the name, Sorry.... It so happens that John Wayne, yah, "The Duke" himself, used to eat breakfast here every morning.

Everything is cooked the same as has been for decades. How they do this, I'll never know. I mean hash browns always have the same crispy crust, the toast is always perfectly cooked, even a glass of water always tastes the same, lots of crushed ice in a little diner tumbler.

I've been eating there for over 30 years and whenever I do, there is only one obvious thing to order. Well, the house special of course, the Chili Cheese Omelet.

Now if you are a fan of the Chili Cheese Omelet as I am, you know that there great ones and there are not so great ones. In my not so humble opinion, here is the criteria for a Great Chili Cheese Omelet:

#1 You need to start with a really good quality Chili, of course.. Not to many beans and nothing fancy. Canned is even Ok, as long as it's a good one.

#2 There is only one kind of cheese, good old American Cheese that will melt into the perfect gooey molten that can only be achieved with this particular white bread, middle American variety.

#3 It must be cooked on a flat griddle and delicately folded into a little package. The egg wrapping must be paper thin and not over cooked.

#4 The interior temperature needs to be hot and I mean like 800 degrees... All the way to the very last bite.

#5 No condiments... No salsa, no sour cream, no avocado, No green chilies, no cilantro. Leave those for the Hybrid Variety. Just Chili, cheese and eggs....

This may sound easy, but the simplest things in life are usually to hardest to execute. In the case of the Classic Chili Cheese Omelet, there is a very fine line between perfection and disaster.

Being the Food Anthropologist that I am, I've had variations of the Chili Cheese, all over the country and some damn good ones at that.

- 2nd Avenue Deli in New York
- Camellia Grill in New Orleans
- The Grubsteak in San Francisco
- The Lunch Counter at the Beverly Hills Hotel

Now that isn't to say that there are certainly great Hybrid variations of the Classic. One of the best I've ever had was at Cafe' Pasquale's in Sante Fe... This version was far from the the Classic, but soooo Fr$#@ckin' Good that I had to mention it.

No matter where my culinary travels have taken me, there is really nothing like the Chili Cheese Omelet served at my own little lunch counter... If you appreciate this Classic American Creation as much as I do, there is probably no other substitute to your own Hometown Diner's version.

Classic, for sure. Loved this. It brought back memories of going to the Paul's Diner with my dad when I was a kid. Are you sure you weren't describing Paul's? :) Well done. Clipped!

hahaha. Paul's was a railcar diner in Sandwich, Illinois. At least I don't think it's there any more. Now I have to go & check. :)

Munch... you are really starting to impress me with this column. And I never fancied myself a food-column sort of guy. But I'm going to recommend that others come over and start reading you.

I loved the imagery in this piece... because we do all have a special place like the one you describe. You made me long for a chili cheese omelet... and I don't even eat chili cheese omelets as a general rule. Now I'm going to get one this weekend for sure!

Mr. Munchie - Long overdue column (been waiting for a chilli-cheese column for years). I agree with the just don't gum it up with a bunch of other junk part, but I perfer a little egg "fluff" , instead of those "wafer thin" egg wraps. It's an omelette, not a blintz. Keep up the great reviews!

I have never even HEARD of a chili cheese omelet. I do not even care for omelets, though I like eggs. I live in the south, though, and there is some of the best food here I have ever tasted. There is a little drive-in (yes, drive-in) out near Weaverville, N.C. that has the best chipped ham sandwiches there are, and you cannot find them much anymore. Maybe you have never heard of those? Anyway, this little place will serve a tray right to your car just like the old days, except not on skates! There is one on the same road that serves biscuits and bacon gravy with coffee that will melt in your mouth! Talk about cholesterol, I guess I have had my share. I try not to eat them much, but I LOVE biscuits and bacon gravy (not the kind you get from a can), and not sausage. Well, since my mouth is now watering, I may go out there tomorrow for breakfast or lunch or both.

Thank you for livening up this otherwise dreary, doomsday Vine with something other than bad news.

    They have chili cheese omelettes at the truckstop we always go to after church, I may have to try that. I always have to get biscuits and gravy, cause I crave it. There is no other place around where I live that makes it from scratch...so fluffy, if only I could figure out that recipe.

    My omelette technique is getting a bit better, but still needs work...a thin layer of egg might be just the ticket!

        This sounds delish, and I'm going to try it, but I'll have to blaspheme your version a little because, quite frankly, pretending that "American cheese" is actually a form of cheese at all is a crime against humanity. That gooey, milk reduction painted orange is as far from "cheese" as is a stick of butter, or a bowl of ice cream.

        It has contributed to the genocide against American taste in food for far too long, and the buck stops here, buck-o. I'll have to go with a nice, New Zeeland sharp, white cheddar (like the one I got at Trader Joe's yesterday that is so delicious that, two Ritz later, I stopped eating with crackers because it was too distracting to have the flavor of the cracker conflating my experience).

        Not to mention: no salsa? Really? Not even a little hot-sauce? I think that some fresh salsa and a few splashes of Tapitio would make a positive contribution.

        Still: Sounds delish, and I want one, right now.

        Zom Zom/Darth,

        Yah, it would be hard to disagree on the American Cheese thing. The Chili Cheese Omelet is the only place I partake in this modified cheese product.

        I am a freak for quality cheeses of all kind. When in NYC, one of first stops is Murray's Cheese in the West Village.

        In the Bay Area, it's Cow Girl Creamery at the Ferry Building.

        I would much rather take a cheese course in place of a desert, as well.

        Point taken, but don't knock it til' you try it.....

        Yeah american cheese leaves a lot to be desired, but there are some good creameries next door to me in Wisconsin, which I refer to as Cheeseland. Door county is known for it's blueberries and cherries and light houses too.
